lurks a high-performance cooking instrument fairly beg-

ging to be put through its paces. All the elements feature a

true simmer setting that hold sauces and stews below the

boiling point. One element includes an even lower one-

touch melt setting. Transitional models have stainless steel

trim. Contemporary models can be mounted ush with the

countertop.
