More flour, less butter and chocolate makes for a taller, lighter brownie. Using the best
quality chocolate and cake flour will have delicious results.

PREPARATION METHOD
1. Preheat the oven on the Convection Mode at 325°F. 2. Using a microwave or double boiler melt the
chocolate and butter together. 3. In a separate bowl, whisk together the eggs, sugar, salt, and vanilla.
4. Whisk the chocolate mixture into the egg mixture. 5. Sift the our and baking powder together and
fold into the chocolate mixture. 6. Grease the bottom of a 9x13 inch pan and pour in the batter. Bake
for 20-25 minutes, until a toothpick comes out clean. 7. When done, optionally sprinkle chocolate chips
on top of warm brownies, allowing them to melt. Spread evenly with a spatula.

1. Preheat the oven on the Convection Mode at 325°F with a rack set on position 2. 2. In a large bowl
whisk together sugar, salt, vanilla, and melted butter. 3. In a separate bowl, sift together the our and cocoa
powder. 4. Add the eggs one at a time to the large bowl with the butter and sugar mixture and mix well.
5. Using a spatula or rubber scraper, mix in the our mixture until well combined. 6. Generously grease or
butter a 9x13 inch pan. 7. Pour the batter into the pan and spread until level. 8. Bake 35-40 minutes.
