PRECAUTIONS AND GENERAL INFORMATION This appliance is intended for use in commercial establishments only. This appliance is intended to prepare food for human consumption. No other use is recommended or authorized by the manufacturer or its agents. Operators of this appliance must be familiar with the appliance use, limitations and associated restrictions. Operating instructions must be read and understood by all persons using or installing this appliance.

INSTALLATION NOTE: DO NOT discard the carton or other packing materials until you have inspected the appliance for hidden damage and tested it for proper operation. Refer to SHIPPING DAMAGE CLAIM PROCEDURE on the inside front cover of this manual. INSTALLATION (continued) ELECTRICAL WARNING: Refer to electrical specifications on page 1. Circuit must meet or exceed the amperage and wattage requirements listed. Electric Shock hazard 120 Volt units require a properly grounded NEMA 5-15R receptacle: 208/240 Volt units require a properly grounded NEMA 6-15R receptacle: All servicing requiring access to non-insulated electrical components must be performed by a factory authorized technician.

OPERATION CAUTION: HEATING OPTIONS HOT SURFACE 1. Moist heat with Humitrol Rack: a. MOIST operation prevents food from drying out as heat is applied to the warming chamber. b. To set for MOIST operation, remove the Humitrol Rack from bottom of drawer insert pan and carefully pour approximately 2 quarts of water (½” depth) into the pan. Reinstall rack. c. When the drawer is closed, the Humitrol Rack allows water vapor to rise through the stored product in the drawer.

OPERATION (continued) OPERATION CAUTION: 1. Determine the type of food to be warmed. Hot Surface 2. Refer to the chart on page 6 to determine the type of heat required. 3. Set the air vent control for the type of heat, and rotate the thermostat knob to the temperature setting desired. Exposed surfaces can be hot to the touch and may cause burns. 4. Allow warmer to pre-heat for approximately 30 minutes before use. CAUTION: DO’S and DON’TS 1. DO DO NOT Always use a drawer pan.

Remove drawer pans and Humitrol racks FREQUENCY: Minimum - monthly. Every 2 weeks recommended. TOOLS: Screwdrivers, Phillips (+) and flat blade (-). Nut drivers, 3/8” and 7/16”. Food-grade lubricant.
