Biscuit Wa es
Ingredients:
5 egg yolks, 5 tbsp. hot water, 100 g (3½ oz)
sugar, grated rind of lemon, 150 g (5½ oz)
our, ½ tsp. baking powder, 5 egg whites,
whisked, 1 tbsp. rum, icing sugar
Preparation:
Beat the egg yolks, water, sugar and lemon
rind. To check if the correct consistence has
been achieved, mark the surface with a knife
blade. If the mark remains then continue.
Stir in the our si ed with baking powder
and the rum, and nally gently fold in the
whisked egg whites.
Bake the dough immediately.
Sprinkle the baked wa es with icing sugar
and serve them warm.

Exquisite Nut Wa es
Ingredients:
200 g (7 oz) margarine or butter, 75 g (2½
oz) sugar, 1 packet vanilla sugar, 3 eggs, 150
g (5½ oz) our, 1 tsp. baking powder, 75 g
(2½ oz) walnuts or hazelnuts, ground, 1 tbsp.
rum, icing sugar
Preparation:
Whisk fat, sugar and vanilla sugar. Add eggs
and then our si ed with baking powder.
Finally stir in the nuts and rum.
Bake the dough immediately.
Sprinkle the baked wa es with icing sugar.
Serve warm or cold.

When preparing the wa e batter ensure
all the other ingredients have the same
temperature. e dough may “sweat” a
little, but the wa es are very tender and
crispy if carefully prepared.
Sand Wa es
Ingredients:
200 g (7 oz) margarine or butter, 100 g (3½
oz) sugar, grated rind of 1 lemon, 4 eggs, 200
g (7 oz) our, ½ tsp. baking powder, 1 tbsp.
rum, icing sugar
Preparation:
Cream fat, sugar and lemon rind. Add the
eggs one a er another and mix well. Gently
fold in the our si ed with baking powder
in small portions, and nally stir in the rum.
Bake the dough immediately.
Sprinkle the baked wa es with icing sugar.
Serve warm or cold.

Cinnamon Wa es
Ingredients:
125 g (4½ oz) margarine or butter, 3 eggs, 50
g (1 3/4 oz) sugar, 1 packet vanilla sugar, 250
g (9 oz) our, 1 tsp. cinnamon, 2 tsp. baking
powder, 125 ml (4½ oz) lukewarm water,
sugar and cinnamon for icing
Preparation:
Whisk the fat, sugar and vanilla sugar; add
the eggs one a er another. Gently fold in
the our si ed with baking powder and
the lukewarm water, and nally add the
cinnamon.
Bake the dough immediately.
Sprinkle the baked wa es with sugar and
cinnamon. Serve warm.
