COOKING INSTRUCTIONS
Warm Potato Salad
2lbs.smallredpotatoes,cutinto½-inchpieces
4slicesbacon(uncooked),cutinto½-inchpieces
¼ cup chopped onion
2 tsp. sugar
1tsp.salt
1tsp.our
½ tsp. celery seed
1
/8 tsp. pepper
2½ Tbs. apple cider vinegar
1. Ina2-quartcasserole,combinepotatoesand¼cupwater.Coverwithlid.Cook
atHighuntilpotatoesaretender(7-10min.);stirtwice.Drainandsetasideto
cool slightly.
2. Inamediumbowl,cookbaconatHighuntilcrisp(2½-3½min.);stironce.Place
bacononapapertowel.Reserve1Tbs.drippings.
3. Combine drippings and onion. Cover with plastic wrap; turn back a corner to
ventsteam.CookatHighuntiltender(1½-2½min.);stironce.
4. Stir in sugar, salt, flour, celery seed, and pepper. Cook at High until mixture boils
(30-40sec.).Stirinvinegarand½cupwater.CookatHighuntilliquidboilsand
thickensslightly(1-2min.);stironce.Addbacontodressing.Pourdressingover
potatoes. Stir well.
Makes 6 servings.
Black Bean Soup
1cupchoppedonion
1clovegarlic,minced
2cans(15oz.each)blackbeans,drained
1can(14-16oz.)stewedtomatoes,chopped
1can(13.75-14.5oz.)chickenbroth
1can(7-8.5oz.)corn
1can(4oz.)choppedgreenchilies
1-2tsp.groundcumin,ortotaste
1. Placeonionandgarlicina3-quartcasserole.Coverwithlid.CookatHighfor2
to4minutesuntiltender.
2. Add one can of beans, mash beans with a fork. Add remaining ingredients; mix
well.
3. Cookuncovered,atHighfor10minutes;stir.ReducepowertoMediumand
cookfor5minutes.Stirbeforeserving.
Makes about 2 quarts.
