Beef and Barley Stew
1½lbs.beefstewcubes,cutinto½-inchpieces
½ cup chopped onion
2Tbs.all-purposeour
1Tbs.Worcestershiresauce
1can(13.75-14.5oz.)beefbroth
2mediumcarrots,cutinto½-inch(12.7mm)slices(about1cup)
½ cup barley
1bayleaf
¼ tsp. pepper
1pkg.(9-10oz.)frozenpeas,thawed
1. Ina2-quartcasserole,combinebeef,onion,our,andWorcestershire;mixwell.
Coverwithlid.CookatHighfor6to8minutesuntilbeefisnolongerpink,stirring
once.
2. Stir in beef broth, carrots, barley, bay leaf, and pepper. Cover with lid. Cook at
Mediumfor1to1½hoursuntilcarrotsandbeefaretender,stirring2to3times.
3. Stirinpeas.Coverwithlid.CookatMediumfor10minutes.Letstandfor10
minutes. Remove bay leaf before serving

Broccoli and Cheese Casserole
¼ cup butter or margarine
¼ cup chopped onion
1½Tbs.our
½ tsp. salt
¼ tsp. dry mustard

/8 tsp. pepper
1½cupsmilk
¼ cup chopped red pepper
8 oz. (2 cups) cheddar cheese, shredded
1pkg.(9-10oz.)frozenchoppedbroccoli,thawed
4cupscookedspiralshapedpasta(8oz.dry)
1. Ina2-quartcasserole,cookbutterandonionatHighfor1to2minutesuntil
onion is soft, stirring once.
2. Addour,salt,mustard,andpepper;mixwell.CookatHighfor30to60seconds
until mixture boils. Stir in milk until smooth.
3. Stir in red pepper. Cook at High for 2 to 3 minutes until mixture boils and thickens
slightly, stirring twice. Stir in cheese until melted.
4. Addbroccoliandpasta,mixwell.Coverwithlid.CookatHighfor4to6minutes
until heated through, stirring once. Stir before serving.
Makes 6 servings.
