Dont lose your cool.
Super powered blenders can pulverise ingredients
without adding liquid, including milling flours and seeds.
Commercial blenders typically have flat bottomed jugs
and this means that particles at the bottom of the jug can
rebound several times between the base and the blades,
getting hot before the ingredients on top even start being
blended. So by the time all the ingredients have been
milled properly, some parts of the mix can become very
hot indeed.
This heat starts to release the volatile oils found in the
inner layers of grains, causing the flour to clump together.
The inner layers of grain are where the nutrients are
found, so clumping is often a sign that the delicate,
nutritious oils are evaporating.
