Microbubbles are the secret.
Dairy is a common ingredient in most smoothies and
milkshakes, with many recipes calling for popular
ingredients like milk, yogurt and ice cream. When
whipped very quickly, the fats in dairy ingredients are able
to suspend air pockets as bubbles. And just as the particle
size of solid ingredients aects the taste profile, the size
of bubbles also has a significant impact on the taste and
texture of drinks. Tiny air bubbles can suspend aromatic
flavour molecules and stimulate taste buds to enhance the
way we perceive taste.
As any three year old with a straw and a glass of milk can
tell you, it’s possible to create large air bubbles that sit
on top of dairy. The tongue detects these large bubbles
separately from the mix. The experience is a mouthful of
air followed by a flat beverage. These bubbles also pop
quickly, meaning you have to drink fast to enjoy them
while they last.
Smaller ‘microbubbles’ are so tiny they can integrate
throughout the liquid, suspending evenly to make
smoothies taste creamier and lighter. Microbubbles are
smaller than a millimetre and look just like thicker milk,
but they create the silkiest and creamiest textures.
But there are two diculties in creating microbubbles.
The first is that the ingredients need to be mixed in a
way that will suspend air evenly throughout the mix.
The second issue happens when ice and frozen fruit
combine with liquid, causing the temperature to drop.
An air pocket can form above the blades, like an igloo,
allowing the blades to spin freely with frozen unblended
ingredients stuck above. This often creates a need to
intervene by either inserting a spatula or paddle while
blending, or the need to stop multiple times to shake the
jug to loosen the ingredients.
