Application Guide
Makes approximately 12 tortillas
Guacamole
Ingredients:
2 medium avocados, seeded and peeled
2 tbls. minced onion
1 tbls. lemon juice
1 clove garlic, minced
1 tomato, seeded and chopped
½ tsp. salt
¼ tsp. cayenne
¼ tsp. cumin
Directions:
Mash avocados in small bowl. Add the remaining ingredients and blend till
smooth, scraping down sides of container as necessary. Cover and chill before
serving.
Taco Tortilla Salad
Ingredients:
1 lb. ground beef
1 medium onion, chopped (½ cup)
1 clove garlic, minced
1 small head iceberg lettuce, chopped
1 cup shredded cheddar cheese (4 oz.)
½ cup sliced pitted black olives
2 tbls. finely chopped onions
2 medium tomatoes cut into wedges
1 cup Guacamole (see above recipe)
1 cup sour cream
Optional: Bottled taco sauce
Directions:
In a skillet cook meat, onion, and garlic till meat is browned and onion is tender.
Drain off fat. Season the meat mixture with chili powder and salt. The meat
mixture should be kept warm until served.
Prepare 4 tortillas. Fill each with equal portions of the meat mixture and the
remaining items starting with the lettuce then the meat mixture, olives, onion,
tomatoes, cheese, guacamole and sour cream. The taco sauce may be added
before the guacamole and sour cream. Serve immediately.
