At the Start screen:

Recall a stored name.

Erase number

You can then add a different phone number for the name or you can
erase the name.
Caution:
You cannot undo Erase functions, so be careful!
Erase your entire phone book
Caution:
This feature erases your entire phone book and can’t
be undone!
