Mac and Cheese
1-1/2 cups milk 12 oz. evaporated milk
1/4 cup butter, melted and cooled 3 eggs
1/2 tsp. salt 3 cups Cheddar cheese, shredded
1/2 lb. macaroni
Whisk together all ingredients, except cheese and macaroni. Pour mix into a
buttered cooking pot and then add cheese and macaroni. Stir to combine, cover
and cook on HIGH for 30 minutes. Reduce setting to LOW and cook an additional
3 hours. Serve warm.
Mac and Corn Casserole
2 (15 oz.) cans whole kernal corn 2 (15 oz.) cans creamed corn
16 oz. Velveeta
®
cheese, cubed 1 cup butter, cubed
2 cups dry macaroni salt and pepper to taste
Combine all ingredients into cooking pot and stir. Cover and cook at HIGH setting
for 45 minutes. Stir and cook additional 30 minutes, stir. Reduce setting to LOW
and cook 3 to 4 hours. Serve warm.
Oatmeal
2 cups oats, lightly toasted 8 cups water
2 cups milk 1/4 cup brown sugar
1/2 tsp. salt
Toast 2 cups of oats in a dry pan for about 5 minutes.
Put oats in buttered cooking pot with water, sugar, milk and salt Cover and cook
on LOW for 8 hours. Serve warm.
Pork Ribs
3 to 4 (1 lb.) baby back pork ribs 1/4 cup dark brown sugar
1 Tbs. paprika 1 tsp. onion powder
1 tsp. garlic powder 1/2 tsp. cumin
1/2 tsp. cayenne 1/4 tsp. cracked black pepper
1 tsp. thyme 1 (15 oz.) can Barbecue sauce
Coat inner walls of cooking pot with non-stick spray or cooking oil. Combine all of
the dry seasonings and rub over the rib meat. Stack ribs vertically in the cooking
pot, with the larger cut bone side down and leaning against each other. Cover
and cook on LOW setting for 6 to 8 hours. Remove cover and dab barbecue
sauce on ribs. Cover, turn heat to HIGH setting and cook an additional 30
minutes or until well glazed.
Brownies
Spray or wipe inside of cooking pot with cooking oil. Pour in your favorite
brownie recipe. Cover and cook on LOW setting for 3 hours. For an additional
delight, mix 8 ounces of cream cheese with 2 Tbs. of cream. Drop spoonfuls of
mix into brownie batter and cook as directed.
Cobbler
In a buttered cooking pot combine
4 cups peaches, sliced 1/4 cup sugar
In a separate bowl combine;
1 cup cake mix 1/2 cup sugar
1 cup milk
Pour cake mix, milk and sugar over peaches. Cook on LOW setting for 3 hours or
until a toothpick inserted into the center comes out clean. Serve into bowls and
sprinkle with cinnamon for an extra treat.
Chicken Cacciatore
1 medium onion, chopped 1 red bell pepper, chopped
1 cup mushrooms, diced (optional) 2 garlic cloves, minced
3-4 lbs. boneless chicken breast 1 can (14.5 oz.) diced tomatoes
3 Tbs. tomato paste 1 cup chicken broth
1/2 cup white cooking wine 1/2 tsp. salt
1/4 tsp. pepper 1 tsp. Italian seasoning
1 bay leaf 3 Tbs. corn starch
3 Tbs. water
Place onion, pepper and garlic in the bottom of cooking pot. Place chicken on
top. Combine tomatoes, tomato paste, chicken broth, wine, salt, pepper, Italian
seasoning, bay leaf and pour over chicken pieces.
Cover and cook on HIGH setting 3 to 4 hours or until chicken is done. Serve over
pasta or rice.
Dinner Rolls
Take any bread dough and cut into small roll sized pieces. Put them in a buttered
cooking pot and let it rise for an hour. Cover and cook the rolls on HIGH setting
for 60 to 90 minutes until no longer sticky. Serve warm.
Lasagna
In cooking pot, put two cups of your favorite meat or veggie tomato sauce.
Put three lasagna noodles on top, then another layer of sauce and 1/2 cup of
shredded cheese Continue to build two more layers and reserve 1/2 cup of
cheese. Cover and cook on LOW for 6 hours. Sprinkle with remaning cheese and
cook an additional 10 minutes. Serve warm.
