BANANA BREAD
Yield: 2 loaves
Preheat oven to 350°F
¾ cup sugar 2 cups all purpose our
½ cup butter or margarine, softened 1 teaspoon baking soda
1 cup (2 medium) ripe bananas, mashed ½ teaspoon salt
cup milk ½ cup chopped nuts of choice (optional)
1 teaspoon vanilla
2 eggs
1. In large bowl, combine sugar and butter; beat until light and uffy. Add 2 eggs; beat well. Add
bananas, milk, and vanilla; blend well.
2. In small bowl, combine our, baking soda, salt, and nuts. Mix well. Add dry mixture to banana
mixture. Stir just until dry ingredients are moist. Do not over mix.
3. Pour into (2) greased 8" x 4" loaf pans. Bake at 350°F for 20–25 minutes or until toothpick
inserted into center comes out clean. Cool 5 minutes in pan, and then remove from pan. Cool
completely, wrap tightly, and store in refrigerator.
