BANANA BREAD
Yield: 2 loaves
Preheat oven to 350°F
¾ cup sugar 2 cups all purpose our
½ cup butter or margarine, softened 1 teaspoon baking soda
1 cup (2 medium) ripe bananas, mashed ½ teaspoon salt
⅓ cup milk ½ cup chopped nuts of choice (optional)
1 teaspoon vanilla
2 eggs
1. In large bowl, combine sugar and butter; beat until light and uffy. Add 2 eggs; beat well. Add
bananas, milk, and vanilla; blend well.
2. In small bowl, combine our, baking soda, salt, and nuts. Mix well. Add dry mixture to banana
mixture. Stir just until dry ingredients are moist. Do not over mix.
3. Pour into (2) greased 8" x 4" loaf pans. Bake at 350°F for 20–25 minutes or until toothpick
inserted into center comes out clean. Cool 5 minutes in pan, and then remove from pan. Cool
completely, wrap tightly, and store in refrigerator.
