• When turning tile n/eat ovei; always use
a spatula as it will not i)uncture tile meat
allowing the juices to run ()/it. This will hel I)
to kee I) tile meatjuic> Turn tile meat only
once, as juices are lost when the n/eat is
repeatedly turned. Season or salt the n/eat
after it has been cooked.
• Be sure to trim any excess tilt fl'om meat
or poultr> To prevent steaks or chops fl'om
curling while they are being cooked, slit the
tat around tile edges at about 2" intervals.
To test fl)r aloneness, make a sn/all cut ill tile
center of tile meat.
Tile aloneness of meat is affected bv tile
thickness of tile cut. It is impossible to cook
a thin piece (ff meat to a rare doneness.
A steak should be at least 1" thick to have it
turn out rare and juicy. Tile cooking time
is afl'ected bv tile temi)erature of tile meat
when you start to cook it, tile size and shape
of th e c/It a n d th e kin d of n/ea t VO/l a re
cooking. Tile degree of aloneness desired
also affects tile time.

]lemove tile cover beflwe turning tile griddle on.
The griddle is made fl'om Type 304 stainless
steel and highly polished to provide a smooth
cooking surthce. It is normal ti)r it to darken
with use as oils cook onto tile surfltce to
provide a stick-resistant base or "seasoning."
The griddle is thern/()staticallv controlled
and cycles on and off to maintain tile set
temi)erature. A light will glow t() indicate
the griddle is on.
The griddle assembly should not be removed
for clealfing.
Once tile unit is ill position, tile rear center
shiI)ping screw can be removed. It is located
beneath tile griddle title cover. Remove tile
title cover by lilting it straight up. Be careflll
not to scratch tile backguard during remowd
of tile flue cover.
Tile two outer screws are leveling screws.
Do not remove these two screws, They can be
turned to level the griddle or to provide a
ti)rward slope to hel I) grease and oils to drain
away from tile ti)od being cooked. After using
the griddle a few tin/es you will be able to
judge tile slope best ti)r tile ti)ods you are
cooking and your personal preference.
When replacing the griddle title covei, ensure
that tile cover slips to tile outside of tile ti'ont
and back metal flanges of the fixed griddle
assembly: This will ensure a tight fit of the
lille cover.
Removethe center shipping
screw.Leavettle two outer
