Control panel Sensor bunions The sensors react to touch. Each touch is confirmed with an audible tone. This tone can be turned off (see *Settings ~ Keypad tone”). Control panel Display The display is used for showing the time of day or information about modes, temperatures, cooking duration, Master Chef programs and settings. Information or a list of options is shown in the display depending on the function selected. After turning the oven on with the On/Off sensor (D, the main menu wil appear: If a cooking process is running, selecting Change will call up a list of options which can be set or changed for the cooking process in progress.
Control panel Symbols The following symbols may appear in the display: Symbol Ascription o Timer Allocates an illuminated Sensor button O to an option and indicated that the option can be selected. i if more than four options are available a bar will appear on the right-hand side of the display.Use the allocated sensors to scroll through the list. Features Model numbers A list of the ovens described in these operating instructions can be found on the back page. Data plate The data plate located on the front frame of the oven is visible when the door is open. Printed on the data plate are the model number, serial number and the connection data (voltage/frequency/ maximum rated load) of the oven, Have this information available when contacting Mile Technical Service.
Features Shelf runners Side runners are located on the right and left-hand sides of the oven with {735 levels for inserting accessories. The shelf level numbers are indicated on the front of the oven frame. Each side runner consists of two rails: The accessories (e.g. wire oven rack) slide in between the rails. The Flexible telescopic runners {depending on model) are inserted on the bottom rail. The runners can be removed for cleanings purposes. See "Cleaning and Care".
Features Flexible telescopic runners HFC71 The Flexible telescopic runners can be attached to any shelf level. Push the Flexible telescopic runners all the way into the oven before placing accessories on them. The accessories will then automatically sit securely in between the stoppers at either end of each runner and be prevented from sliding off. The Flexible runners can support a maximum load of 33 Ibs (15 kg).
Features # Then secure the Flexible runner to the bottom of the two rails as illustrated (3). if the telescopic runners are difficult to pull out after inserting, you may need to pull firmly to release them. To remove a Flexible telescopic runner: ® Push the Flexible runner in all the way.
Features Round baking form HBF27-1 This circular form is suitable for cooking fresh or frozen pizzas, flat cakes, tarts and baked goods. The surface has been treated with Perfect Clean enamel. Gourmet Baking Stone HBS60 The baking stone is ideal for baking dishes with a crisp bottom such as pizza and bread. The baking stone is make from a heat retaining stone and is glazed. Place the stone directly on the wire rack. A wooden paddle is supplied with it for placing food on and off the stone.
Features Roast Probe The roast probe reliably monitors the roasting process. The tip of the probe continuously measure the core temperature of the meat or poultry. The Flexible runners cannot be fitted to Shelf level 4 when using the food probe, as they would cover the connection socket for the food probe. Opener The opener allows you to open the cover of the oven light. 24 Catalytic enameled liners — Side walls These are installed behind the shelf runners and protect the interior walls against soiling.
Features Oven controls The oven controls allow you to use the various cooking modes to bake, roast and broil. It also allows you to access: ~ the time of day display, — timer, a timer to automatically turn cooking programs on and off, the Master Chef programs, — the creating of a Favorite program, settings that can be customized.
Features Perfect Clean treated surfaces The revolutionary Perfect Clean enamel is a smooth, non-stick surface that cleans easily with a sponge. Food and soiling from baking and roasting can be easily removed from these surfaces. Do not use ceramic knives as these will scratch the Periclean surface. Follow the instructions in the "Cleaning and Care” section of this manual so the anti-stick and easy cleaning properties are retained.
Before using for the first time General settings & The oven must not be operated until it has been properly installed within cabinetry. The oven will turn on automatically when it is connected to the power supply. Welcome screen A welcome greeting is displayed. You will then be asked to select some basic settings which are needed before the appliance can be used. u Follow the instructions on the display. Set the language ® Scroll through the list until the desired language appears.
Before using for the first time Time of day display You wail then be asked when you want the time of day to show in the display when the oven is turned off (see *Settings Time of day Display™): On The time Is always visible In the display. O The display appears dark to save energy. Some modes are limited. — Night Dimming The time only shows in the display between 5:00 adman 11:00 pm. |t turns off at night to save energy. B Select the desired option. u Confirm with OK.
Before using for the first time Heating the oven New ovens may have a slight odor during their first use. Healing up the oven for at least one hour with nothing in it will eliminate the odor. Ensure that the kitchen is well ventilated while the appliance is being heated up for the first time. Close doors to other rooms io prevent the smell spreading throughout the house. 2 Remove any protective wrapping and sticky labels from the oven.

Settings Language [® The desired country and language can be set. After selecting and confirming your choice, the language selected will appear in the display. Tip:: If you accidentally select a language you do not understand, select the [ symbol to return to the sub menu. Time of day Display Select how you would like the time of day to appear in the display when the oven is turned off: On The time of day will always appears in the display.
Settings Lighting On The interior lighting is turned on during the entire cooking period. — On for 15 Seconds The oven lighting turns off 15 seconds after a program starts. Touching tums it on for another 15 seconds. Display brightness The display brightness is represented by a bar with seven segments. [ e & Select Darker or Lighter, to change the brightness of the display. Buzzer tones Melody At the end of a process, a melody will sound several times in intervals.
Settings Keypad tone An audible tone is heard with sate touch of a sensor. The volume of the keypad phone Is represented by a bar with seven segments. T Maximum volume is selected when all segments are filled. If none of the segments are filled, the volume is turned off. m Select Quipster or Louder, to adjust the volume. u Select On or Off, to turn the keypad tone on or off. 34 Units of measurement Weight g The weight of food in Master Chef programs is shown in grams.
Settings Cooling fan The cooling fan will continue to run for some time after the oven has been turned off to prevent humidity from building up in the oven, on the control pane! or in the surrounding cabinetry. Temp. Controlled The cooling fan will turn off when the oven compartment temperature drops below 160°F Time Controlled The cooling fan will tum off after approx. 25 minutes. Condensation can cause the cabinetry and the counter top to be damaged. This could lead to corrosion of the appliance.
Settings Safety System lock & The system lock prevents the oven being turned on inadvertently. The system lock will remain activated even after a power failure. Select On to activate the system lock. The timer can still be used when the system lock is active. On The system lock is now active. f you want to use the oven press and hold the sensor next to OK for at least 6 seconds. Cif The system lock is not active. The oven can be used as normal.
Settings Calibrate temperature Using temperature calibration the temperature can be modified, in all modes and Master Chef programs, so that it is slightly higher or lower than shown. The temperature calibration is represented by a bar with seven segments. T If all of the segments are filled the oven temperature is much higher than indicated in the display. !f no segment is filled the oven temperature is much lower than indicated. & Select adjust the temperature calibration. & Confirm with OK.
Settings Factory default Settings Any settings that have been altered will be reset 1o the factory default setting. ~ Favorites All Favorites will be deleted. — Default Temperature Any default temperatures that have bean changed will reset to the factory default settings.
Timer The timer can be used to time any activity in the kitchen , e.g. boiling eggs. The timer can also be used at the same time as a cooking program if a start and finish time have been set, e.g. a reminder to stir the dish or add seasoning. A maximum time of 8 hours and 59 minutes can be set for the timer. Setting the timer When the setting Time Show Off is set the oven must be turned on to set the timer. The timer can then be seen counting down in the display when the oven is turned off.
Timer At the end of the timer the Timer symbol flashes, the time starts counting upwards, —a buzzer will sound if turned on (see "Settings Buzzer tones"). u Select "Timer". The buzzer will tum off and the symbols in the display will go out. 40 Resetting the timer m Select "Timer" or the illuminated sensor next to the timer duration that is counting down. The time previously set appears. ® Set the new timer duration using the numeric keypad.
Guide 1o the modes The oven has a wide range of modes for preparing a variety of foods. Oven modes Default | Temperature temperature range Convection Bake 325°F 75-475°F Use this mode for baking and roasting on several (160°C) levels at the same time. You can cook at lower temperatures than with the Surround =) mode because the fan distributes the heat evenly throughout the cavity for a consistent baking temperature.

Operation Energy saving tips Remove any accessories from the oven that you do not require for cooking. Try not to open the door when cooking. If a temperature range is given, it is best {0 select the lower temperature and check the food after the shortest cooking time given. ~ The default setting for the Time of Day display Time Show Off will consume the least amount of energy. — With the factory default setting Lighting On for 15 Seconds the oven interior lighting turns off autocratically after 15 seconds.
Operation Quick Guide & Tums on the oven, The main menu will appear. & Place the food in the oven. & Select Operating Modes. 8 Select the desired mode. The oven mode and default temperature will appear. The oven heating, lighting and cooling fan will turn on. ® Adjust the default temperature is necessary. The default temperature will be autocratically accepted within a few seconds. If necessary, select Change to go back to the temperature setting {see "Additional functions Changing the temperature”).
Additional functions You have placed the food in the oven, selected a mode and set the temperature. B Select Change. Additional options will appear in the display for you to select for change If desired. Temperature — Core Tern. This will only appear if you are using the roast probe. You cannot set a cooking duration when using the roast probe. — Duration — Ready at Start at This will appear if a Duration or Ready at time has sen set.
Additional functions Changing the temperature As soon as a cooking mode is selected, a default temperature will appear in the display together with its possible range {sea the "Guido 1o the moodiness. u If the default temperature is suitable for your recipe, confirm it with not suitable for your recipe, you can change it for this particular cooking program. You can also permanently reset the rerecorded temperature to suit your personal cooking habits (See *Settings Default temperatures”).
Additional functions Rapid P Reheat Rapid P Reheat can be used to speed up the preheating phase. The Rapid P Reheat function will tum on automatically if a temperature of more than 212°F (100°C) is set for Convection Bank [ Auto Roast and Surround [, Do not use Rapid P Reheat to preheat the oven when baking pizzas or delicate mixtures (e.g. small baked goods, sponge). These will brown too quickly. You can turn off Rapid Preheat fora relevant cooking process via the P Reheating option.
Additional functions Setting additional duration You have placed the food in the oven, selected a mode and set the temperature. By entering Duration, Duration or Start at you can automatically turn the cooking program on or off. ~ Duration Enter the cooking duration desired. Once the duration set has elapsed, the heating will turn off automatically. The maximum duration which can be set is 12 hours. A cooking duration cannot be entered If you are using the roast probe.
Additional functions Tuning on and off automatically It It is recommended to use the automatic On/Off feature when roasting. Do not delay the start of the program for f00 long when baking. Cake mixtures and soughs will dry out, and the leavening agents will lose | their effectiveness To turn a cooking program on and off autocratically, you have a choice of how to enter the time parameters: ~ Duration and Treacly at — Duration and Start at Ready at and Start at It is now 11:45.
Additional functions Changing the set time 2 Select Chang. All options that can be changed will appear. 2 Select the desired time. m Change the set time ® Confirm with OK. These settings will be deleted in the event of a power failure. Canceling cooking B Select "Back”. 8 When Cancel Cooking? appears, select Yes. The oven heating and lighting will tum off, and any duration set will be deleted.
Master Chef Your oven has a wide range of Master Chef programs that enable you to achieve excellent cooking results with ease. Simply select the appropriate program for the type of food you are cooking and follow the instructions in the display. List of food types The programs can be found under Master Chef. — Poultry Meat Fish ~ Pizza ~ Baled Goods Potatoes Using the Master Chef programs B Select Master Chef. A list of food types will appear in the display. # Collect's the desired food types.
Master Chef Notes on using these programs — The oven interior should be at room temperature before starting a Master Chef program. Some programs require a preheating phase before food is placed in the oven. A prompt will appear to tell you when to add the food. The duration quoted for Master Chef programs is an estimate. It may increase or decrease depending on the program. When using the roast probe, the duration will be determined by when the core temperature is reached.
Favorites You can create and save YOU Own N programs. ~ Each one can have up to 10 cooking stages. This enables you to save your most frequently used recipes very accurately. Each stage contains a modes, temperature and duration or core temperature. You can specify the shelf level(s) for the food. You can enter a program name for your recipe. When you next select the program, it will start automatically.
Favorites More cooking stages can be added, for example, if you would like to add another cooking function to follow the first. m If additional cooking stages are required, select Add Cooking Stags and proceed as you did for the first cooking stage. & When you have completed setting the cooking stages. select Complete Program. Set the shelf level(s) to be used: ® Select and confirm the required level(s). A summary of your settings will appear in the display.
Favorites Starting a Favorite m Place the food in the oven. u Select Favorites. The display shows the program names and Edit Program at the bottom. m Select the desired program. A list will appear in the display: — Start Now The program will start right away and the oven heating will turn on. — Start Later This option will only appear if you ars using the roast probe. You can specify when you would ke the program to start. The oven heating will turn on automatically at the time set.
Favorites Changing Favorites Changing conking stages Cooking stages in a Master Chef program that have been saved under a different name cannot be changed. m Select Favorites. The display shows the program names and Edit Program at the bottom. & Select the desired program. m Select Change Cooking Stages. The setting specified for a cooking stage can be changed or mare cooking stages can be added to the program. u Select the desired cooking stage or Add Cooking Stage.
Favorites Deleting a Favorite e Select Favorites, The display shows the program names and Edit Program at the bottom. & Select Edt Program. & Select Delete Program. u Select the desired program. & Confirm if the program should be deleted with Yes. The program is deleted.
Bake Eating food which has been cooked correctly is important for good health. Only bake cakes, pizza, french fries, ete. until they are golden brown. Do not overcook them. Oven modes Depending on how you would like the food prepared, you can use Convection Bake Intensive or Surround & Bake ware The bake ware used depends on the oven mode chosen and how the food is prepared. Convection Bake Intensive Baking tray, Roasting pan, any heat resistant baking dishes.
Bake Temperature [ As a general rule, select the lower temperature given in the chart. Choosing a baking temperature higher than those recommended may reduce the cooking time, but will lead to uneven browning, and unsatisfactory cooking results. Baking duration @ Check if the food Is cooked at the end of the shortest duration quoted. To check if a cake is ready insert a wooden skewer or toothpick into the center, it should come out clean.
Roast Always follow USDA guidelines on food safety. Oven modes Depending on how you would like the food cooked, you can use Convection Bake / Convection Roast Auto Roast ({3, Surround / Surround Roast =] or a Master Chef program. Cookware Any heat-resistant cookware can be used: Wire oven rack, grilling and roasting insert (if available) on top of the universal tray, roasting pans, heat resistant glass/earthen/cast iron cooking and roasting bags.
Roast Roast Probe The roast probe enables the roasting process to be monitored simply and reliably. How the roast probe works The metal tip of the roast probe Is inserted into the food. Therein a temperature sensor in the metal tip which measures the core temperature of the food during cooking. The rise in the core temperature reflects the extent to which the food is cooked.
Roast important notes regarding the roast probe The meat can be placed pollinator on the rack in the universal tray. The metal tip of the roast probe must be fully inserted into the center of the food. When cooking poultry, insert the metal tip into the thickest part of the breast. You can find the thickest part of the breast by pressing the area with your thumb and index finger. Do not let the metal tip touch any bones or insert it into a fatty area of the meat.
Roast You can also delay the start of the cooking program to a later time. To do this, select Start at. You can estimate approximately when the food will be ready as the duration of the cooking program is about the same as if you were cooking food without using the roast probe. Duration and Ready at cannot be set because the total time depends on how long it takes for the core temperature to be reached.
Roast Alternating between the time left and core temperature displays As soon as the time left is shown, you can alternate between the time left and core temperature displays 2 Select Change. Select Status. & Select whether you would like the time left or core temperature to appear in the display. & Confirm with OK. 64 Using residual heat Shortly before the end of the cooking program the oven heating will turn off. The residual heat in the oven is sufficient to complete the cooking process.
Slow Roasting This cooking method is ideal for cooking beef, pork, veal or lamb when a tender result is desired. First, using a cock lop sear the meat on all sides to seal in the juices. Then place the meat in a preheated oven. it will be cooked at a low temperature for an extended time allowing the meat to become very tender. The meat will rest and the juices start to circulate evenly throughout. This gives the meat a very tender and juicy result. Tips Use fresh, lean meat that has been trimmed.
Slow Roasting Using the "Slow Roasting” special mode ® Select Special Modes. & Select Slow Roasting. 2 Set the required temperature. B Set the core temperature. e Follow the instructions in the display. Let the wire oven rack and universal tray preheat in the oven. ® While the oven is preheating, sear the meat on all sides on the cook lop. & Danger of burns! When the oven Is hot use pot holders to insert, remove or turn the food, or when adjusting the oven shelves, etc.
Slow Roasting Adjusting the Slow Roasting temperature Use the wire oven rack with the universal tray on top. Do not use the Rapid P Reheat function to preheat the oven. B Place the rack with the universal tray on shelf level 2. = Select Surround () and a temperature of 265°F (130°C). & Change the preheating function by selecting Change P Reheating Normal. ® Preheat the oven along with the universal tray and wire rack for approx. 15 minutes.
Broil & Danger of burns! Broil with the oven door closed. If you brill with the door open the hot air will escape from the oven before it has been cooled by the cooling fan. The controls will get hot. Oven modes Maxi Broil ) This mode gives excellent browning and searing results. Use this function for chops, ribs, large quantities of meat and browning large dishes. The entire Browning / Broiling element will get hot and glow red. Broil [ This mode is excellent for broiling or searing smaller quantities.
Broil Temperature [ As a general rule, select the lower temperature given in the chart. If higher temperatures are used, the meat will brown on the outside, but will not be properly cooked through. Preheating Always preheat the oven for about 5 minutes with the door closed before Broiling. Shelf levels | 15 Select the shelf level according to the thickness of the food. — Thin cuts: Shelf level Thick cuts: Shelf level 1 or 2 Broiling duration @ Thick pieces of fish and meat take approx. 8-8 minutes per side.
Broil Broil m Place the wire oven rack or the grilling and roasting insert (if available} in the universal tray. ® Place the food on top. 2 Select the required oven mode and temperature. # Preheat the Browning / Broiling element for approx. 5 minutes with the door closed. & Danger of burns! When the oven is hot use pot holders to instar, remove or turn the food, or when adjusting the oven shelves, sic. ® Place the food on the appropriate shelf level (see the Broiling chart). u Close the door.

Special Modes Defrost Use the Defrost function to gently defrost frozen food. The temperature can be set between 75-120°F & Select Specify Modes. u Select Defrost. ® If necessary, adjust the default temperature and set the duration. & Follow the instructions on the display. Alr is circulated throughout the oven cavity to gently defrost the food. & Danger of salmonella poisoning! Observe proper hygiene rules when defrosting poultry. Do not use the defrosting liquid.
Special Modes Dehydrate This program is designed for traditional drying of food o preserve it The temperature can be set between 175-210°F It is important that fruit and vegetables are rips and not bruised before they are dehydrated. & Prepare the food for dehydrating. ~ Peel and core apples, and cut into slices 1/4" (.5 cm) thick. Gore plumbs if necessary. Peel, core and cut pears into wedges. Peel and slice bananas. Clean mushrooms, then either halve or slice them. Remove parsley and dill from the stem.
Special Modes Reheat This program is designed for reheating plated meals. Available options are: ~ Pizza Large Even Dish # Place the food to be reheated in a dish on the rack. Use pot holders when removing dishes from the oven. Condensation may accumulate on the bottom of the dish.

Special Modes Sabbath Program This program is designed for religious observance. Select the Sabbath Program and then select the oven mode and temperature. The program will only start once the door is opened and closed: — The cooking process will start after about 5 minutes using Surround Using the Sabbath Program The program can only be canceled by turning the oven off. ® Select Special Modes. ®m Select Sabbath Program. ® Select the desired mode.
Special Modes Gentle Bake The Gentle Bake mode is ideal for casseroles and gratins which require a crisp top. The temperature can be set between 210-480°F & Select Operating Modes. 2 Select Gentle Bake and change the default temperature if necessary, u Follow the instructions on the display.
Special Modes Canning Always follow the USDA canning guidelines. Canning containers & Danger of injury! Do not use the appliance 1o heat up or can food in sealed jars or containers. Pressure will build up Inside them and they can explode causing damage to the appliance, as wall as the risk of injury and scalding. Only use jars designed for canning: — Canning jars, Jars with twist-off lids. Canning fruit and vegetables It is recommended 1o use the Convection Bake mode.
Special Modes Frozen food Tips for pizza, French fries, croquettes and similar items For best resells place frozen pizza on parchment paper on the wire rack. Small frozen terns such as french fries can be cooked on the baking tray or roasting pan. ~ For small frozen items, use the lowest temperature recommended by the manufacturer. ~ Tums small frozen items several times during cooking. Preparation Eating food which has been cooked correctly Is important for good health.
Cleaning and care & Danger of burns! Make sure the heating elements are turned off and allowed o cool completely. & Danger of injury! The steam from a steam cleaner could reach electrical components and cause 2 short circuit. Do not use a steam cleaner to clean this appliance. All surfaces can discolor or be damaged if unsuitable cleaning agents are used. The front of the oven, in particular, will be damaged by oven cleaners and descales. All surfaces are susceptible to scratches.
Cleaning and care if stains and food residues are allowed to remain on surfaces fora longer period of time, it may no longer be possible to remove them. Continued use without cleaning will make the oven much harder to clean. Remove any soiling immediately. The accessories are not dishwasher safe. Tips ~ Rolling caused by split juices and cake mixtures is best removed while the oven is still warm.
Cleaning and care Stubborn soiling {excluding the Flexible runners) Spitz fruit and roasting juices may permanently discolor surfaces of the oven. This discoloration is permanent but will not affect the performance of the oven. Do not use force to remove these sating. Clean using the instructions in this manual. u Baked on deposits can be removed with a glass scraper or a nonabrasive stainless steel spiral pad. Remove the catalytic panels before using oven cleaners. They will damage the catalytic enamel.
Cleaning and care Stubborn soiling on the Flexible runners Do not wash the Flexible telescopic runners in the dishwasher. This will remove the special lubricant which is essential for their smooth functioning. For stubborn surface soiling or if the bearings become sticky proceed as follows: B Soak the Flexible runners for approx. 10 minutes in warm water and liquid dish soap. If necessary, use the rough side of a dish sponge. The bearing can be cleaned using a soft brush.
Cleaning and care Removing oil and grease ® Remove any accessories from the oven, including the shelf runners. B Wipe any soiling form the oven interior and the inside of the door before starting the cleaning process. This will avoid them baking on. & Select Convection Bake and 475°F (250 °C). u Heat the empty oven for at least 1 hour, or more depending on the degree of dolling.
Cleaning and care Removing the door The door is connected with brackets on each door hinge. Before the door can be removed the hinges must first be unlocked. & Open the door fully. e Release the locking clamps by turning them as far as they will go. Do not attempt to take the door off the brackets when iris in the horizontal position, the brackets will spring back against the oven. Do not use the handle to pull the door off the brackets, the handle could break.
Cleaning and care Reinstalling the door & Open the door fully. if the locking clamps are not locked, the door can easily become detached from the brackets and be damaged. You must make sure that the locking clamps are locked again. & Hold both sides of the door securely and carefully fit it onto the brackets of the hinges. Make sure that the door goes on straight. 86 ® To re lock the locking clamps, turn them back up to the horizontal position as far as they will go.
Cleaning and care Removing the shelf runners with Flexible telescopic runners (fi Danger of injury! Do not use the oven without the shelf runners correctly inserted. The shelf runners can be removed together with the Flexible telescopic runners (if inserted). If you wish to remove the Flexible telescopic runners separately, follow the instructions in "Features Inserting and removing the Flexible telescopic runners’.
Cleaning and care Lowering the Browning/ Broiling element & Danger of bums! Make sure the heating elements are turned off and allowed 1o cool completely. m Remove the shelf runners. ® Unscrew the wing nut. Use caution not to damage the Browning/Broiling element. Do not use force to lower the Browning/Broiling element. e Carefully lower the Browning/Broiling element. The ceiling can now be cleaned. m Raise the Browning/Broiling element and tighten the wing nut securely. u Reinsert the shelf runners.
