spice-rubbed strip steaks
directions:
(2) 16-18 oz steaks 2 tsp dry mustard powder
1 clove garlic
1/2 tsp freshly ground black pepper
INGREDIENTS:
1 tsp chili powder
1 1/2 tsp dried oregano
3/4 tsp salt
In a small bowl, stir together the mustard powder, oregano, chili powder,
salt, and pepper.
Rub each of the steaks with the cut sides of the garlic halves. Pat the spice
mixture all over the steaks. Let steaks rest at room temperature while you
prepare the grill or cover and refrigerate for up to 24 hrs (bring meat to room
temperature before grilling).
Preheat the grill to 300°F with the top air flow vent closed and the bottom air
flow vent set to 5.

Grill the steaks for 6-7 minutes per side for medium rare. Transfer steaks to a
cutting board and let stand for 5 minutes before serving.
