Turkey Juices
When the turkey has rested pick it up with two clean kitchen towels and pour out all the liquid into
the pan. Pour all the turkey juices in a large measuring cup or bowl and skim o the clear fat that rises
to the top. You are now ready to make gravy.
Roux
giblet stock stirring with a whisk to avoid any lumping. Add the Jack Daniels and turkey juices. Season
to taste (i.e. salt & pepper & more JD if needed.) Keep warm until ready to serve!
Orange Cranberry Sauce
½ – cup sugar
½
– cup Cointreau
½
– cup orange juice
1 – package fresh cranberries, rinsed
In a medium saucepan combine the sugar, Cointreau and orange juice, stirring to dissolve the sugar.
Add the cranberries and bring to a gentle boil. Simmer for 10-12 minutes or until the cranberries have
popped. Stir in the orange zest and cool to room temperature.
Pumpkin Biscuits

– tablespoon baking powder

– teaspoon each, ground nutmeg, cinnamon & ginger

– teaspoon salt
3 – tablespoons brown sugar
½
– cup cold butter, cut into pieces
2 – cups pumpkin puree
½
– cup toasted chopped pecans, optional
Preheat oven to Convection 375° and lightly butter 2 cookie sheets
cookie cutter, you should get approx 30 small biscuits.
Place the biscuits on the baking sheets, brush the tops lightly with cream before baking for 15-20
minutes or until the tops are golden.
