To make rice for the red beans use 1 1/2
cups of chicken broth or water and 1 cup of
white rice. Add 1/4 teaspoon salt and bring to a
boil. Close lid and bring pressure to first red ring
over high heat. Adjust heat to stabilize pressure
at first red ring. Cook for 5 to 6 minutes. Remove
from heat and use Natural Release Method, see
page 10.

The degree of hotness can be adjusted to
your preference. Eliminate or cut down on
the amount of cayenne and Tabasco sauce to
make this dish less “Cajun.”
Andouille Sausage is a good choice for this
recipe. It is a smoked pork sausage which is
very popular in Louisiana.
