Ingredients:
• 100 g Parmesan cheese
• 1 onion
• 40 g olive oil
• 250 g risotto rice
• 750 mL vegetable broth
• 100 mL white wine
• 300 g frozen peas
• 20 g butter
Preparation:
Place everything on the scale, weigh and then place the ingredients into bowls. Chop the
Parmesan in the jug of the ThermoBlend Elite for 10 seconds at speed 6 and pour it into a bowl.
Peel the onion, add it to the jug and chop it for 10 seconds at speed 6. Add olive oil and simmer
for 1 minute at 90°C on speed 1. Add the risotto rice and simmer for 3 minutes at 100°C on
speed 1 while stirring. Deglaze with hot vegetable broth and wine and cook for 20 minutes at
100°C with the lid open. Now put the frozen peas in the jug and cook for 5 minutes. Finally, add
the butter and grated Parmesan to the jug and stir in everything with the help of the spatula.
