Lemon drizzle cake
»super quick«
Ingredients:
175 g flour
1 tsp. baking powder
175 g sugar
175 g butter or
margarine
3 eggs
Juice of one lemon
50 g lemon icing
For the shapes:
1 tsp. butter or
margarine
1 tbsp. breadcrumbs
Tableware:
Preparation:
1. Have the ingredients ready. Butter can be gently heated
if required.
} Microwave on a medium heat for approx. 30 secs.
2. Sift the flour together with the baking powder into a
mixing bowl. Add the sugar, soft butter, eggs and lemon juice.
3. Mix the ingredients with a whisk on low setting, then
mix all the ingredients together at the highest setting for
approx. 3 mins to form a creamy mixture.
4. Pour the dough into the greased baking tray sprinkled in
breadcrumbs and bake.
} 170 - 190 °C 50 - 60 mins. or
} 180 °C in microwave on low setting for 25 - 30 mins.
5. Once cooled, pour over the lemon icing.
To melt the glaze:
} Microwave on medium setting for 2 - 3 mins.

Red wine biscuits

Ingredients:
250 g butter or
margarine
150 g sugar
1 tsp. vanilla sugar
5 eggs
150 g chocolate shavings
2 tsp. cocoa
1 tsp. mint
125 ml red wine
250 g flour
2 tsp. baking powder
Tableware:
Preparation:
1. Mix the butter, sugar, vanilla sugar and eggs until foamy.
Add the chocolate, cocoa, mint and red wine. Quickly stir in
the flour and baking powder.
2. Pour the dough into the greased baking trays covered
with breadcrumbs or ground nuts and bake.
} 170 - 190 °C 60 - 70 mins. or
} 180 °C in microwave on low setting for 30 - 35 mins.
3. After baking, allow the biscuits to cool in the tray for 5 -
10 mins. then leave to cool on a cooling rack.
4. Pour over chocolate icing if desired. To melt the glaze:
} Microwave on medium setting for 2 - 3 mins.
