Roasting
} How do you roast in a combi-microwave appliance?
Roasting in a combi appliance is also very similar to traditional roasting in an oven. The
convection and grill create a crispy, brown texture and the microwave shortens the cooking
times for meat by up to a third.
} Preparation?
Only use good quality meat, which has been well hung. Quickly wash the joint and dry it
with some kitchen paper, then detach or break any string. Do not wash meat portions such
as escalope or small chunks of goulash – simply rub with a damp cloth. Do not leave them on
the wooden board. Sprinkle with salt and herbs shortly before roasting. Use salt sparingly,
and add more herbs and spices.
} What type of roasting dish?
A high-sided roasting dish should be used to avoid creating mess in the appliance. Normal
steel, ceramic or cast iron roasting dishes are not suitable for combi use. Roasting dishes
made from heat-resistant glass, glass ceramic, or oven bags (without metal clips) are very
good, on the other hand.
} Which setting should I use?
Familiarise yourself with the settings in the roasting chart for your own roasting recipes,
or see similar preparation methods in the recipe section. If you are unable to use the
microwave function, the roasting time will be doubled. Always place the item to be roasted
on the swivel plate, and on the lowest rack so that the heat can circulate. Turn over the
meat once or twice during cooking. Use two spoons or meat tongs so that the juices do not
run.
} When is the joint ready?
Press the joint with a spoon. Cooked meat is non-elastic and will not be springy to the
touch. You can also use a meat thermometer to determine the exact core temperature to
find out if the meat is cooked.
} After roasting
Cover the meat and allow to rest for 5-10 mins. so that the juices can collect. Meanwhile,
prepare the sauce. Always slice cooked meat along the grain, and serve on a pre-heated
plate with a little sauce drizzled over. To make the sauce, mix the remaining joint pieces
with a little hot water, and together with the roast ingredients, then strain through a sieve
in a microwavable serving dish. Add a little more liquid if required, mix with flour or cornflour
and microwave on maximum setting. Season to taste and quickly heat before serving.
