Sheep’s milk cheese sauce
»goes well with wholemeal pasta«
Ingredients:
100 g sheep’s milk cheese
(high fat grade)
1 tsp. of flour
125 mL milk
50 g black olives
1 to 2 stalks of basil
Tableware:
Preparation:
1. Crush the sheep’s milk cheese with a fork, stir with flour
and milk to a smooth consistency, and heat while stirring
several times.
} Microwave oven max. setting, 3 to 4 min
2. Stone the olives and cut them to small pieces. Wash the
basil, spin it dry, finely chop it, and stir it into the sauce.
Heat for a short time.
} Microwave oven max. setting, 1 to 2 min
} Tip: Other cheese types, for example gorgonzola can be
processed in the same way.

Sauce Hollandaise
»ideal with asparagus or meat dishes«
Ingredients:
100 g butter
3 egg yolks
1 tbsp. lemon juice
2 tbsp. of water
1 tsp. of white wine vinegar
Salt
White pepper
Red pepper
Tableware:
Preparation:
1. Melt the butter in a small jug.
} Microwave oven max. setting, 1 to 2 min
2. Stir the yolk, the lemon juice, the water, and the white
wine vinegar thoroughly in the cooking dish and warm the
mixture.
} Microwave oven low setting, 2 to 3 min
3. Stir the butter with an egg whisk drop by drop into the
yolk mixture. Season with the herbs and again warm for a
short time. Stir briskly in between.
} Microwave oven high setting, approx. 1 min
4. Serve as soon as possible.
