Wild garlic soup
»especially good in spring«
Ingredients:
1 small onion
1 garlic clove
4 tbsp. of olive oil
1 bunch of wild garlic
250 mL vegetable broth
1/2 cup (100 g) cream
Pepper
Salt
1 to 2 stalks of basil
2 slices toast
Tableware:
Preparation:
1. Dice the onion and the garlic very fine, wash the wild
garlic, and chop it. Steam with half the broth and the olive
oil.
} Microwave oven max. setting, 4 to 5 min
2. Add the remaining broth and the cream and let it boil once
more.
} Microwave oven max. setting, 4 to 5 min
3. Puree with the hand mixer, season to taste, and possibly
let it boil once more.
} Microwave oven max. setting, 2 to 3 min
4. Serve with roasted croutons.

Carrot cream soup
»a fine appetizer«
Ingredients:
1 onion
1 tbsp. butter
500 g carrots
1 tsp. of flour
500 mL vegetable broth
200 mL milk
1/2 cup (100 ml) cream
Salt
Pepper
Parsley, finely chopped
Tableware:
Preparation:
1. Finely chop the onion and steam it in butter.
} Microwave oven max. setting, 1 to 2 min
2. Wash and clean the carrots, cut them into small pieces,
add them to the onion, pour in 125 mL broth, and steam
covered until soft.
} Microwave oven max. setting, 13 to 15 min
3. Mix in the flour and puree with the hand mixer or in a
mixer. Add the remaining broth, milk, and cream and let it
boil covered.
} Microwave oven max. level, 4 to 5 min
4. Season to taste and serve decorated with parsley.
