1. Preheat the air fryer to 400°F.
2. Peel and slice the eggplant into ½ inch thick
slices.
3. Get a large bowl. Add the oil and seasonings
together and mix well.
4. Dredge the eggplant into the season in the
mixture until well-coated.
5. Put the eggplant into the preheated air fryer
and cook at 400°F for 10 minutes.

¼ teaspoon onion powder
¼ teaspoon ground cumin
½ teaspoon salt
