CRESCIA AL FORMAGGIO
You can vary the flavor of this traditional Italian bread by using Asiago cheese, the
poor man’s Parmesan, or the genuino Romano sheep’s milk cheese, Locatelli, a fa-
vorite of native Italians. Both are hard grating cheeses. Be prepared for this bread to
rise very high in the pan during the last rise before baking. It is a great picnic bread
eaten out of hand with cold meats and fruit.

cup plus 1 tablespoon water
3 large eggs
3 tablespoons olive oil

cup grated Asiago or
Locatelli cheese

tablespoons nonfat dry milk
1 tablespoon sugar
2 teaspoons gluten

teaspoon salt
2 teaspoons SAF yeast

teaspoons bread machine yeast
Place all the ingredients in the pan according to the order in the manufacturer’s in-
structions. Set crust on medium and program for the Basic or Tender cycle; press
Start. (This recipe is not suitable for use with the Delay Timer.) The dough ball
will be sticky.
When the baking cycle ends, immediately remove the bread from the pan and place it
