USING THE FRYER (After Startup)
1. Load basket; do not overfill. See Recommended Basket Capacities on page 30.
2. Carefully lower baskets into the shortening.
SHUTDOWN
1. Turn the thermostat knob to OFF.
2. Turn the gas valve extension arm to PILOT (the pilot will continue to burn).
3. To shut off all gas to the system, including the pilot, turn gas valve extension arm to OFF.
EXTENDED SHUTDOWN
1. Turn the main gas shutoff valve off.
2. Turn the thermostat knob to OFF.
3. Unplug the fryer.
4. Turn the gas valve extension arm to OFF.
5. Drain the fryer.
6. Allow the fryer to cool, then apply a thin coat of cooking oil to tank interior and tank back to
prevent rust.

The thermostat controls the
temperature of the shortening in the
frytank. Turn the knob to set the desired
temperature.
