Recipes Pancake Basics! • Since pancake batter does not need a lot of mixing, over-mixing is a frequent mistake. The dry ingredients and wet ingredients should be stirred together until just mixed. A few lumps will remain. If your batter looks too thick you may add more liquid. Using the liquid that is called for in the recipe, add only one tablespoon at a time until the batter reaches desired consistency. • A properly preheated griddle is also very important to perfect pancakes.
Buttermilk Pancakes 1⁄2 teaspoon salt 2 cups all purpose flour 3 tablespoons sugar 2 cups buttermilk 1 tablespoon baking powder 3 eggs Preheat griddle to 375ºF. Stir together flour, sugar, baking powder and salt in large bowl to blend. Combine buttermilk and eggs to blend. Add to dry ingredients and stir until mixed. Pour batter by 1⁄4 cupfuls onto griddle. Cook about 3 to 4 minutes turning once. Makes 20-22 pancakes.
Blueberry Pancakes 21⁄2 cups flour 1 teaspoon salt 1 tablespoon baking powder 2 tablespoons sugar 1 tablespoon vegetable oil 2 eggs 2 cups milk 11⁄2 cups frozen blueberries; thawed, rinsed, and dried on paper towel Preheat griddle to 375ºF. In a large bowl, mix together flour, salt, baking powder and sugar. In a small bowl, beat together oil, eggs and milk. Stir into flour mixture. Fold in the blueberries. Pour batter by 1⁄4 cupfuls onto griddle. Cook about 5 minutes turning once. Makes 20-24 pancakes.
