INDIRECT COOKING RACK

 To setup indirect use a drip pan or a ceramic stone. You want to make sure there is enough

space around the pan or stone for proper airflow.

 Sear Steaks closer to the fire.

 For foods that have lots of fat, use a pan to catch the drippings.
