The flame from the wood fire should
roll across the length of the oven’s roof.
Avoid overfeeding the fire, there should
never be flames coming out the mouth
of the oven. If you are struggling to get
a good flame, ensure the wood you are
using follows our guidelines at the begin-
ning of this chapter.
