BASIL HONEY GRILLED CHEESE

DIRECTIONS
1. Take the basil leaves and stack them on top of each other. Then roll up the stack of basil
leaves and cut into strips across the roll. This is called a ‘chiffonade’ cut for basil and
results in small strips. Place these strips in a small bowl and add the honey. Stir to
combine and then set aside.
2. In another small bowl, mix together the melted butter and the crushed red pepper.
3. Spread the basil and honey mixture on the inside of each piece of bread.
4. On the bottom slice of bread place 2 slices of fresh mozzarella and 1-2 slices of tomato.
Put a top slice of bread with the basil honey side on the inside (this should be touching
the tomato and mozzarella).
5. Preheat the grill. While the grill is preheating, brush the chili butter onto the outside of
the top slice of the sandwich.
6. When the grill is pre-heated, place the sandwiches with the buttered side down, brush
the top side with the remaining chili butter and close the lid of the grill.
7. Grill the sandwiches for 4-5 minutes or until the cheese is melted.
8. Place on a cutting board, slice in half, and enjoy!

8 (½ inch) slices of French bread
8 fresh basil leaves
16 slices of fresh mozzarella
1 medium tomato cut into
¼ inch slices
4 tsp. crushed red peppers
8 tbsp. honey
4 tbsp. melted butter
