Baked goods
We recommend dark pans of metal since these absorb
the heat better. Place the pan in the middle of the wire
rack.
For sheet cakes without greaseproof paper, oil the
pan slightly.
Small baked items such as cream puffs, cookies or
pastries can be baked on two levels, 1+3 or 2+4.
If you bake on several levels it is normal that the trays
are not done at the same time. Leave the lower trays
bake a little longer or put them in the oven earlier the
next time.
Before cutting, let the baked goods cool on a rack.
If the baked goods are too dark on the bottom: insert
one level higher, select a lower temperature.
If the baked goods are too dark on the top: insert one
level lower, select a lower temperature, and extend the
baking time a bit.
If the cake is too dry, set the temperature a little
higher. If the cake is not cooked on the inside, set the
temperature a little lower.
Baking times cannot be shortened by selecting a
higher temperature; it is better to select a somewhat
lower temperature.
If the cake collapses: use less liquid or set the
temperature 50°F (10 °C) lower. Do not open the
oven door too soon.
The cake rises only in the middle: grease the edges of
the pan.
If the cookies are hard to take off the sheet, insert the
sheet in the hot oven again and remove the cookies
while they are still warm.
If the cake does not come out of the pan when yhou
turn it over, use a knife to loosen the cake around the
edges. Turn the cake pan upside down again and
cover it several times with a cold, wet cloth. Next time,
grease the pan well and sprinkle some bread crumbs
into it.
Always follow the manufacturer's instructions for pre-
cooked and frozen products.
