bowl, and blitz until smooth
Add salt and pepper and lemon
juice, to taste, and whiz again to
incorporate

Drain and dry the peppers

A trick to retain the green colour of
an avocado sauce is to keep it out of
contact with the air. Always serve it as
soon as possible, but meanwhile store
it a tall beaker, or similar shaped
container, and cover with cling film
touching the surface to exclude as
much air as possible.
