Blade Holder Locks blade in place and removes the
blade for easy cleaning

Speed Turn clockwise for high speed and
Control Dial counterclockwise for low speed. You
may find it helpful to use a lower
setting for more fragile foods like
fresh bread. Higher speed for foods
like meat or cheese.
