Sun-Dried Tomato and Basil Pesto
A twist on traditional pesto, the sun-dried tomato brings a welcome 
change to this popular sauce. 
Makes about 5 cups
3  cups extra virgin olive oil
8 garlic cloves
4  cups sun-dried tomatoes (packed in oil; drained)
1½  cups fresh basil leaves
¼
teaspoon freshly ground black pepper

  cup grated Pecorino Romano
¾  teaspoon sea salt
3  tablespoons white vinegar
Put all ingredients, in the order listed, into the jar of your Cuisinart

 1.3 HP Blender. Run on High for 2½ minutes or until 
desired consistency is achieved. 
Adjust seasonings to taste and serve.

Rémoulade
A traditional condiment in France, this version is best paired with 
pan-fried white fish.
Makes about 4 cups
¼ cup water
¾  teaspoon hot sauce
1½  tablespoons Worcestershire sauce
¾ cup cornichons
1  cup jarred roasted red peppers, drained and cut into 
 2-inch pieces
¼  cup capers, drained 
3¾  cups mayonnaise

Orange-Ginger-Soy Marinade
This works well with most meats, especially pork and chicken. 
Makes about 4 cups
3  cups orange juice
3  tablespoons reduced-sodium soy sauce
1½  tablespoons rice wine vinegar
3  ounces fresh peeled ginger, cut into ½-inch pieces
6  scallions, cut into 1-inch pieces

½  teaspoon sea salt
3 tablespoons honey
