WARNING • Check grease level in tin can often and empty or change when 3/4 full. Use extreme caution as the smoker, tin can and its contents will be hot. • When grilling, grease from meat may drip into the charcoal and cause a grease fire. If this should happen close lid to suffocate the flame. Do not use water to extinguish grease fires. • Use caution since flames can flare-up when fresh air suddenly comes in contact with fire.

Smoke Stack Opening Clear an assembly area and get a friend to help you put your smoker together. Lay cardboard down to protect smoker finish and assembly area. Grill Body Assembly Step 1 Place the grill body assembly on its end with the lid open. Make sure that another person is holding the grill body assembly steady. The opening to the smoke stack should be facing up as illustrated.
Bottom View Grill Body Assembly Step 4 Attach the left front and rear legs (with wheel axle holes) to the grill body assembly. First, insert the bottom shelf into the left rear leg, then move bolted end of leg until bolts align with holes in the grill body assembly. Attach using four M6 X12 mm bolts, M6 flat washers and M6 nuts. Hand tighten only. Repeat this step for left front leg. Tighten all bolts and nuts for each leg attached to the grill body assembly.
Step 6 Attach the air shutter door and air shutter to the left side of grill body assembly using M5 shoulder bolt as illustrated. Then attach M6 shoulder for door latch. Air Vent Door M5 Shoulder Bolt Step 7 Air Vent M6 Shoulder Bolt Smoke Stack Attach smoke stack assembly and side handle to right side of grill body assembly using eight M6 X 12 mm bolts and M6 nuts.
M6 Cap Nut M6 Spring Step 8 Place smoke stack damper and M6 spring onto pre-attached bolt on smoke stack as illustrated. Then screw on M6 cap nut to secure. Smoke Stack Damper Smoke Stack Step 9 Cooking Grills Charcoal Grates Open lid. Place heat distribution plate on top of fire pot down inside grill body assembly. Step 10 Place charcoal grates on support ribs. Step 11 Place cooking grills on support ribs directly above charcoal grates.

PREPARATION FOR USE & LIGHTING INSTRUCTIONS PLACE THE GRILL OUTDOORS ON A HARD, LEVEL, NON-COMBUSTIBLE SURFACE AWAY FROM ROOF OVERHANG OR ANY COMBUSTIBLE MATERIAL. NEVER USE ON WOODEN OR OTHER SURFACES THAT COULD BURN. PLACE THE GRILL AWAY FROM OPEN WINDOWS OR DOORS TO PREVENT SMOKE FROM ENTERING YOUR HOUSE. IN WINDY WEATHER, PLACE THE GRILL IN AN OUTDOOR AREA THAT IS PROTECTED FROM THE WIND. READ ALL SAFETY WARNINGS AND INSTRUCTIONS CAREFULLY BEFORE OPERATING YOUR GRILL.
IF USING CHARCOAL CHIMNEY STARTER, PROCEED TO STEP 9 If using lighter fluid, follow all manufacturer’s warnings and instructions regarding the use of their product. Start with 8 pounds of charcoal in cooking chamber This should be enough charcoal to cook with once the curing process has been completed. Open the air shutter approximately 1” to 2” and smokestack damper halfway. Step 6 Saturate charcoal with lighting fluid. With lid open wait 2 to 3 minutes to allow lighting fluid to soak into charcoal.

Step 5 Open the air shutter approximately 1” to 2” and smokestack damper half way. With lid open, stand back and carefully light charcoal and allow to burn until covered with a light ash (approximately 20 minutes). WARNING: NOTE: Charcoal lighting fluid must be allowed to completely burn off prior to closing firebox lid (approximately 20 minutes). Failure to do this could trap fumes from charcoal lighting fluid in grill and may result in a flash-fire or explosion when lid is opened.
Step 1 Remove cooking grills from cooking chamber and set aside. Place charcoal grates lowest level of cooking chamber. Grilling In Cooking Chamber Step 2 Place a tin can on the grease cup holder. A tin can must be placed under the grease hole at all times. Step 3 Follow the instructions below carefully to build a fire. You may use charcoal and/or wood as fuel in the Charcoal Drum (see “Adding Charcoal/Wood During Cooking” section of this manual).
IF USING LIGHTER FLUID, PROCEED TO STEP 8 If using pre-treated charcoal, follow all manufacturer’s warnings and instructions regarding the use of their product. Start with 8 pounds of charcoal in cooking chamber. Open the air shutter approximately 1” to 2” and smokestack damper halfway. Step 7 With grill lid open, stand back and carefully light charcoal and allow to burn until covered with a light ash (approximately 20 minutes).
Additional charcoal and/or wood may be required to maintain or increase cooking temperature. Adding Charcoal/Wood During Cooking Step 1 Stand back and carefully open cooking chamber lid. Use caution since flames can flare-up when fresh air suddenly comes in contact with fire. Step 2 Wearing oven mitts/gloves, remove food and cooking grills. Step 3 Stand back a safe distance and use long cooking tongs to lightly brush aside ashes on hot coals.
AFTER-USE SAFETY WARNING • Always allow smoker and all components to cool completely before handling. • Never leave coals and ashes in smoker unattended. Make sure coals and ashes are completely extinguished before removing. • Before smoker can be left unattended, remaining coals and ashes must be removed from smoker. Use caution to protect yourself and property. Place remaining coals and ashes in a noncombustible metal container and completely saturate with water.
