OPERATION
1. Turn the MODE SELECTOR Switch (1) to the deĆ
sired function.
2. Set the TIMER (5) for the desired cooking time or
set it to ON. The buzzer sounds and the apĆ
pliance shuts off when the time has expired.
3. For the HOT AIR and COMBI modes, set the
TEMPERATURE Dial (2) to the desired cook temĆ
perature.
NOTE: The optimum temperature for Combi
mode is 300Ć350_F (149Ć177_C).
For STEAM mode set the TEMPERATURE Dial
(2) no higher than 212_F (100_C).
NOTE: For steaming use 212_F (100_C). For
poaching turn the temperature dial to the
POACH position, 180_F (82_C).
4. The selected mode operates automatically. The
temperature, time and mode can be altered at
any time during the cooking process. The operaĆ
tion can be stopped by the use of the Mode SeĆ
lector Switch or by opening the door.
5. At the end of the specified time period, the buzzĆ
er sounds and the appliance will shut off autoĆ
matically. Move the TIMER (5) to the ON position
to stop the buzzer and restart the appliance in a
continuous on mode.
6. To cool down the oven cavity, switch the MODE
SELECTOR Switch (1) to COOL DOWN. In the
Cool Down mode neither the temperature dial or
the timer will be operational.
NOTE: The unit can be cooled down rapidly for
steaming, cleaning, etc. Open the dor
wide and select the cool down mode.
The oven will cool from 350-212_F
(177-100_ C) in approximately two minĆ
utes.
7. The mode selector switch is also the main power
switch. In the OFF position the appliance is not
operational.
Steam on Demand
Steam on Demand is helpful in many ways. The
steam injection allows a much faster, consistent,
even heat transfer. It also increases product moisture
and reduces shrinkage while cooking faster and
helps the oven temperature recover faster. Steam on
Demand allows for Combi Frying oven ready
breaded foods to perfection and crusty breads are a
breeze.
Steam can be introduced at any point during the
cooking process as follows:
1. Use the STEAM INJECTION TIMER (3) to set the
desired steam time.
2. Press the STEAM ON DEMAND SWITCH (4).
The following example demonstrates how steam inĆ
jection can be used with breads to form a superior
crust:
1. Preheat oven to 350_F (177_C) in the Combi
mode.
2. Load product into the oven.
3. Set the fan to low speed.
4. Set the steam injection time for 5 minutes.
5. Set the TIMER (5) for the desired total cooking
time for the product.
6. Press the STEAM ON DEMAND SWITCH (4).
Here is an example of Combi Frying breaded foods:
1. Preheat oven to 375_F (191_C).
2. Load product into oven on wire racks or perfoĆ
rated pans.
3. Set TIMER (5) for 10 minutes.
4. Set STEAM ON DEMAND (4) for 3 minutes.
5. Remove product from oven when time expires.
NOTE: More or less time may be added depending
on portion size and oven loads.
