RECIPES FOR WAFFLES
Waffles (quick recipe)
Ingredients
• 500gramsofflour
• 1sachetofbakingpowder
• 150gramsofbutter
• 4eggs
• 100gramsofsugar
• 1/4litreofmilk
• 1smallbagofvanillasugar
• 1pinchofsalt
Preparation
Mixthebakingpowderintotheflour.Allowthe
buttertomelt.Beattheeggstoafroth.Addthe
sugar,milk,vanillasugarandsalt,stirringallthe
while.Addthecooledbutterandmixthoroughly.
Finally,addtheflourwhilststirringcontinuously.
Allowthewaffleirontoheatup,andbakethe
wafflesfor2-3minutes.
Brussels waffles (milk/water recipe)
Ingredients for 8 waffles
• 120gramsofsugar
• 2eggs
• 350gramsofflour
• 1teaspoonofgratedlemonpeel
(fromunsprayedlemons!)
• ½bagvanillasugar
• 1pinchofsalt
• 150mlofmilk(3.5%fat)
• ½sachetofbakingpowder
• Lukewarmwater
Preparation
Stirthebutter,sugar,lemonpeelandvanillasugar
toafroth.Slowlyaddtheeggs.Mixtheflourand
bakingpowder.Addalternatepotionsofflourand
milktothemixture,andaddsufficientwaterto
obtainabatter(similartopancakebatter).Leave
thebattertostandforabout20minutes,andthen
stirthoroughly.Allowthewaffleirontoheat;grease
thehotbakingplate.Bakethewafflesonebyone,
andsprinklewith
sugarandcinnamon.
Waffles (crème fraîche recipe)
Ingredients
• 125gramsofcrèmefraîche
• 125gramsofbutter
• 6eggyolks
• 250gramsofsievedflour(type405)
• 1pinchofsalt
• Eggwhitefrom6eggs
• 1vanillapod
• 100gramsofcastorsugar
Preparation
Warmthecrèmefraîche.Beatthebuttertoafroth
andaddtheeggyolks,stirringallthewhile.Add
alternateportionsofthesaltandflourandthe
crèmefraîchetothebuttermixturetoobtainathick
batter.
Beattheeggwhiteuntilstiff,andfolditthrough
thewafflebatter.Leavethebattertostandfor
30minutes.Bakethewafflesonebyoneinthe
greasedwaffleiron.Mixtheinsideofavanillapod
withcastorsugar,andsprinklethemixtureover
thefreshly-bakedwaffles.Ifyousowishservethe
waffleswith
whippedcreamandcherriesorcherryjam.
