Globe (round) and oblong (plum or paste) tomatoes
are both suitable for canning sauces.
To peel your tomatoes, place them in a pot of boiling water for
30 to 60 seconds or until skins start to crack. Immediately dip
in cold water. The skins should slip off easily!
Be sure to check your recipe – you may need to add bottled lemon
juice or Ball
®
brand Citric Acid to your sauce to ensure a safe and
tasty home canned product. Differences among the variety of
tomatoes, growing conditions, and many other factors can change
the natural acidity level of your tomatoes.
