Piña Colada Coleslaw
This colorful fruity salad is a hit with all ages.
1. TOSS 4 cups cabbage coleslaw mix with 1-1/2 cups cubed
pineapple and 1/2 cup shredded sweetened or raw coconut.
2. STIR 1/3 cup Piña Colada Jam (page 38) into 1/3 cup coleslaw
dressing and toss with cabbage mixture.
3. REFRIGERATE at least 1 hour to blend flavors.
Makes 6 (3/4 cup) servings
