Homemade Strawberry
Energy Bars
Packed full of protein-rich nuts and seeds, these bars are a great source of
energy any time of the day. Feel free to vary the nuts, seeds, dried fruit and
jam to create your own individualized power bar.
1. PREHEAT oven to 350°F. Coat 13x9-inch baking pan with
cooking spray. Combine oats, sunflower seeds, almonds,
dried fruit and flax seeds in a large bowl. Whisk eggs and
maple syrup in a small bowl until blended. Slowly whisk in
peanut butter until combined. Using fork, stir peanut butter
mixture into oat mixture until moistened and crumbly.
2. SPREAD about half of the mixture over bottom of pan. With
greased fingers, press firmly to form the crust, making sure
there are no holes. Spread with Strawberry Jam. Crumble
remaining oat mixture over jam, pressing firmly to adhere.
3. BAKE 30 to 35 minutes or until light golden brown and set;
cool completely on wire rack. Refrigerate until firm.

1/2 cup whole almonds
1/2 cup assorted dried fruit
1/4 cup ground flax seeds
1 cup natural peanut butter or
almond butter
1/4 cup pure maple syrup
2 large eggs
1 cup Strawberry Jam (page 26)
