Thesolenoidvalveforsteaminjectionismountedbehindtheservicepanelontheright-handsideofthe
unit.Theelectronictimerispresetatthefactory.A¼”coppertubingisprovidedontheSolenoidValve
forwaterhookupwithacompressionfitting.Afterthewaterhookupismade,makesurethatthereareno
leaks.Forsteaminjection,presstheSteamswitchmomentarily.
Tocooldowntheoventoalowerdesiredtemperature,followthestepsdetailedbelow.
(1)Opentheovendoors.
(2)TurnSelectorSwitchto“ovencooldown”position.Fanwillnowoperateandcooldowntheoven.
(3)Whentheovenhascooleddowntothedesiredtemperature,turntheSelectorSwitchto“O”
position.Closeovendoors.
(1)Withporcelainenamelinteriors,thisovenisdesignedtobeasmaintenancefreeaspossible.
However,forbestresults,theovenshouldbecleanedregularly.Enameledinteriorscanbe
easilycleanedwithovencleaners.
(2)Bakedonsplatter,oil,greaseordiscolorationonthestainlesssteelfrontorinsideoftheoven
mayberemovedwiththestainlesssteelcleanersuppliedoranyothersimilarcleaningagent.
(3)Tocleantheblowerwheel,removeandimmerseinammoniatedwaterfor20to25minutes.
Then,scrubitoffwithasmall,stiffbrush.Thesameprocedurecanbefollowedforwireracksand
racksupports.Toremovetheblowerwheel,loosenthesetscrews(2)onthehuboftheblower
wheelandtightenthe3/8”wheelpullerbolt(supplied)incenterofthehub(SeeFigure2).

performed.

(4)Itwillbenecessarytohaveaccesstothe
backoftheovenforserviceneedsrelated
tothegassupplyandelectricpowersupply.
(5)Asystemwiringdiagramisprovidedinthis
manualandonthebackoftheservice
panelontherightsideoftheoven.
(6)Thisunitisprovidedwithapermanently
lubricatedelectricmotor.
(7)Allservicingshouldbeperformedbya
factory-authorizedtechnicianonly.
(8)Forpropermaintenanceandrepairs,call
thefactorytollfree(800-431-2745)foranauthorizedserviceagencyinyourarea.
