greek-ish quinoa salad

A deliciously light and healthy salad option. Goes
great with grilled chicken or sh too.
Ingredients
2 cups quinoa
2-1/2 cups chicken broth
2tablespoons extravirginoliveoil
3 teaspoons lemon juice
2 teaspoons red wine vinegar
1/2 teaspoon salt
1 cup cherry tomatoes, halved
1/2 cup green bell pepper
1/2 cup yellow bell pepper
1/2 cup cucumber
1/3 cup feta cheese
1/4 cup black olives, chopped
Cook quinoa according to instructions, substituting
chickenbrothforwater.Whenquinoaisnishedcooking,
uffwiththeincluded

. Place in refrigerator and
allow to cool to room temperature.
